This is a fabulous chicken dish that's made with just a few simple ingredients. It's ready in a little more than 30 minutes.
5 chicken thighs, bone in, skin on
¼ c. olive oil
3 garlic cloves, minced
½ t. Kosher salt
¼ t. black pepper
1 t. dried oregano
¼ t. crushed red pepper flakes
½ t. dried thyme
2 lemons, 1 cut into wedges, 1 zested and juiced
Preheat oven to 375 degrees.
Add chicken, olive oil, garlic, salt, pepper, oregano, crushed red pepper flakes, thyme, lemon juice and zest in a large bowl together; combine well.
Place chicken in a cast iron skillet, skin side up.
Toss lemon wedges in the leftover marinade; add to the skillet in between the chicken pieces.
Bake for 35-40 minutes or until browned and crispy.
