Let your crock pot do the work to make this yummy lemon chicken. A little flour, lemon juice and an Italian seasoning packet will make your family very happy.
1/4 c. all-purpose flour
3-4 large boneless, skinless chicken breasts, cut into thirds
4 T. (1/4 c.) butter, divided
1 packet Good Seasons Italian dressing/seasoning mix
1/2 c. freshly squeezed lemon juice
1/2 c. chicken broth
salt and pepper, to taste
Rinse chicken pieces in water. Lightly coat chicken in flour; set aside.
Turn on crock pot; turn setting to Low heat.
Heat 2 T. butter in a large non-stick skillet over medium-high heat. When butter is melted, add half of the flour-coated chicken pieces, not over-crowding the pan; season with salt and pepper. Cook chicken for 3-4 minutes or until golden brown on each side. Chicken won't be cooked all the way. It's just getting a golden-brown crust. Remove chicken from skillet; place in crock pot.
Add the 2 remaining T. butter in skillet; cook remaining flour-coated chicken pieces on each side for 3-4 minutes or until golden brown. Remove chicken from skillet and place in crock pot.
Sprinkle the Italian dressing/seasoning mix evenly over the chicken. Pour the lemon juice and chicken broth over the tops. Cover; cook on Low heat for 3 hours.
Serve chicken whole or shredded, with the lemon sauce/broth.
