Ham and Cheese Breakfast Casserole

Description

Make breakfast special by serving your family a great breakfast casserole. It's quick and easy to make and so delicious.

Ingredients

30 oz. bag of frozen hash browns, thawed for 30 minutes
1 stick butter, melted
1/4 t. salt
1/4 t. pepper
1 1/2 c. Monterey Jack cheese, shredded
1 1/2 c. Cheddar cheese, shredded
2 c. cooked ham, diced
8 large eggs
1 1/3 c. evaporated milk, or heavy cream
1 t. seasoned salt
1/2 t. kosher salt
1/2 t. black pepper
1/2 t. dry mustard powder
1/4 t. onion powder

Preheat oven to 400 degrees. Spray a 9x13 inch pan with non-stick spray, or grease with butter.

Add the shredded hash browns to the prepared pan.

In the microwave, melt a stick of butter in a small bowl; pour evenly over the hash browns. Season the potatoes with salt and pepper. Toss it all together; evenly spread it out.

Bake for 25-30 minutes, until potatoes are tender and lightly browned on top. Remove from oven; stir; bake 10 more minutes.

Remove hash browns from oven; reduce oven temperature to 350 degrees
.
In a large bowl, whisk together 8 eggs, evaporated milk, seasoned salt, kosher salt, pepper, dry mustard and onion powder. Add ham and cheese; stir to combine. Pour mixture evenly over the top of the hash browns.

Bake about 40 minutes, or until edges start to brown and the center doesn't jiggle when shaking the pan.
