Whether you make your own homemade gnocchi or use frozen from the supermarket, this dish will satisfy you and your family. The portions may seem small, but they are very filling and satisfying.
1 small head cauliflower, cut into small florets
12 fresh sage leaves
3 T. olive oil
½ kosher salt
¼ black pepper
garlic powder, to taste if desired
1 lb. gnocchi (fresh or frozen)
1/4 c. grated Parmesan cheese (1 oz.)
toasted pine nuts or walnuts, if desired
Preheat oven to 400 degrees.
On a rimmed baking sheet, toss cauliflower, sage, oil, ½ t. salt, ¼ t. pepper and garlic powder, if using. Roast, tossing once, until cauliflower is golden brown and tender, 25 - 30 minutes.
15 minutes before cauliflower is finished, cook the gnocchi according to the package directions. Be careful to not overcook gnocchi or they will get mushy and fall apart.
Top gnocchi with the cauliflower, Parmesan cheese and toasted nuts, if desired.
