In about 30 minutes, you will have a delicious, crispy chicken with a creamy lemon garlic pasta that the family will absolutely love. Serve it with a side salad and a vegetable, if desired.
2 chicken breasts, sliced in half horizontally
6 T. butter, divided
1/2 c. Italian breadcrumbs
1/2 c. grated Parmesan cheese
1/4 c. flour
Creamy Lemon Garlic Pasta:
8 oz. thin spaghetti or pasta of choice
1/2 c. heavy whipping cream
1/2 c. grated Parmesan cheese
freshly squeezed juice from 1 lemon
1 t. garlic powder
1/2 t. salt
1/4 t. pepper
chopped fresh parsley, for garnish
In a large skillet over medium heat, melt 2 T. butter.
Chicken:
Melt remaining 4 T. butter in a shallow dish.
In another shallow dish, combine breadcrumbs, Parmesan cheese and flour. Dip chicken in butter; coat in breadcrumb mixture; place in skillet.
Cook chicken on each side for 3-4 minutes until outside is crispy and chicken is cooked throughout.
Meanwhile, cook pasta according to package directions; drain.
In a medium skillet, add heavy whipping cream, Parmesan cheese, lemon juice, garlic powder, salt and pepper; whisk together; cook over medium-high heat until it starts to thicken. Remove from heat; add pasta to coat it in the sauce.
Serve chicken with the pasta. Garnish with chopped fresh parsley.
