Do yourself a favor and make this healthy low-carb, keto friendly casserole. You don't need to be on any kind of diet to enjoy its wonderful flavor.
1 T. extra-virgin olive oil
1 onion, chopped
3 cloves garlic, minced
1/3 c. vodka
28 oz. can crushed tomatoes
pinch of crushed red pepper flakes
kosher salt
1/2 c. heavy cream
1 large head of cauliflower, (about 3 c.) cut into florets, blanched, drained
2 c. shredded Mozzarella cheese
1 c. freshly grated Parmesan cheese
freshly chopped basil, for garnish
Preheat oven to 375 degrees.
Vodka Sauce:
In a large skillet over medium heat, heat olive oil. Add onion; cook until soft, 5 minutes; add garlic; cook until fragrant, 1 minute more; add vodka, crushed tomatoes, crushed red pepper flakes; season with salt. Stir in heavy cream; cook 5 minutes to let alcohol cook off. Remove from heat.
In a large baking/casserole dish, add blanched cauliflower. Pour on vodka sauce and half of the mozzarella and Parmesan cheeses; stir to combine. Top with remaining Mozzarella and Parmesan cheeses.
Bake about 25 minutes or until cheese is melty and golden.
Serve, garnished with chopped basil.
