Take two of your favorite dishes, mac and cheese and grilled cheese and make them into one fantastic meal. You'll wonder why you had never thought of it before.
Macaroni and Cheese:
1 c. elbow macaroni
1 T. butter
2 c. grated Cheddar cheese
salt and pepper, to taste
Sandwiches:
4 sandwich bread slices
2 T. soft butter, divided
4 Cheddar cheese slices
Macaroni and Cheese:
Cook elbow macaroni in well salted boiling water according to package directions;
drain, shaking out excess water.
Stir in butter and Cheddar cheese. Salt and pepper, to taste. Let cool a bit.
Sandwiches:
Spread about 1/2 T. butter on one side of all bread slices.
Place 1 cheese slice on top of an un-buttered side of bread; spoon half of the cooled macaroni cheese on top; place on 1 piece of cheese; place another slice of bread on top, buttered side up. Repeat to form 2 sandwiches.
Heat a skillet to medium heat on stovetop. When hot, cook both sandwiches on both sides until golden and toasty and the center of the sandwiches are melty.
