Italian Fusilli with Spinach, Artichokes and Sun-Dried Tomatoes

Description

This Italian pasta is a delicious and healthy dish to make when you are in a rush to put dinner on the table. It can be on the table in about 30 minutes.

Ingredients

8 oz. fusilli pasta
2 T. olive oil
3 cloves garlic, minced
1/4 c. sun-dried tomatoes, drained and chopped
1 c. artichoke hearts, chopped
3 T. capers, drained and rinsed
5 oz. fresh spinach
1 T. olive oil
1/3 c. pine nuts, toasted

Cook pasta in well salted boiling water according to package directions until al dente; drain.

Toast pine nuts in a large, dry skillet; remove; set aside.

In the same large skillet, heat 2 T. olive oil over medium heat; add garlic, sun-dried tomatoes, artichokes and capers; saute for 2 minutes. Add spinach; cook and stir until spinach wilts.

Add fusilli and 1 T. olive oil; cook and stir for 1 minute on medium-low heat.

Serve, garnished with toasted pine nuts.
