Description
This Italian pasta is a delicious and healthy dish to make when you are in a rush to put dinner on the table. It can be on the table in about 30 minutes.
Ingredients
- 8 oz. fusilli pasta
- 2 T. olive oil
- 3 cloves garlic, minced
- 1/4 c. sun-dried tomatoes, drained and chopped
- 1 c. artichoke hearts, chopped
- 3 T. capers, drained and rinsed
- 5 oz. fresh spinach
- 1 T. olive oil
- 1/3 c. pine nuts, toasted
Steps
- Cook pasta in well salted boiling water according to package directions until al dente; drain.
- Toast pine nuts in a large, dry skillet; remove; set aside.
- In the same large skillet, heat 2 T. olive oil over medium heat; add garlic, sun-dried tomatoes, artichokes and capers; saute for 2 minutes. Add spinach; cook and stir until spinach wilts.
