Description
Serve this fresh and light pasta salad as a main dish or even as a side dish. It's a great one to take to summer festivities like BBQ's, picnics or family reunions.
Ingredients
- 16 oz. bowtie pasta
- 1 cucumber, chopped
- 1/2 c. chopped green bell pepper
- 2 medium sized tomatoes, chopped
- 1/2 c. fresh parsley, chopped
- 1/2 c. crumbled feta cheese
- Dressing:
- 1/4 c. balsamic vinegar
- 1/4 c. olive oil
- 1 t. salt
- 1 t. black pepper
- 1 T. Dijon mustard
- 1/4 c. freshly squeezed lemon juice
Steps
- Cook bowtie pasta according to package directions, cooking until al dente, 8-15 minutes; rinse in cold water; strain.
- In a large bowl, combine cucumber, bell pepper, tomatoes, parsley and feta cheese.
- In a small bowl, whisk together dressing ingredients.
