Serve this fresh and light pasta salad as a main dish or even as a side dish. It's a great one to take to summer festivities like BBQ's, picnics or family reunions.
16 oz. bowtie pasta
1 cucumber, chopped
1/2 c. chopped green bell pepper
2 medium sized tomatoes, chopped
1/2 c. fresh parsley, chopped
1/2 c. crumbled feta cheese
Dressing:
1/4 c. balsamic vinegar
1/4 c. olive oil
1 t. salt
1 t. black pepper
1 T. Dijon mustard
1/4 c. freshly squeezed lemon juice
Cook bowtie pasta according to package directions, cooking until al dente, 8-15 minutes; rinse in cold water; strain.
In a large bowl, combine cucumber, bell pepper, tomatoes, parsley and feta cheese.
In a small bowl, whisk together dressing ingredients.
Pour dressing over the top of vegetables; add pasta to vegetables and dressing; stir to combine. Refrigerate until ready to serve.
8-12 servings.
