There is grilled cheese and then there is Grilled Cheese. This sandwich takes it to a new level with 4 different kinds of cheese, sourdough bread and a little bit of olive oil. It's ready in minutes and can be served with your favorite sides.
2 slices sourdough bread
1 slice each of Gruyere, Parmesan, yellow cheddar and white cheddar cheeses
unsalted butter, softened
olive oil
Brush a little olive oil on a medium-hot griddle or skillet.
Spread bread slices on outside with softened butter. Place buttered bread on griddle, buttered side down. Place cheeses on bread slices, spreading some pieces to the edges of the bread, if possible. Move the bread around on griddle as cheese melts.
Check color of bread and when golden brown, place the second slice of bread on cheese. Butter the top of the sandwich lightly again; flip; butter new top of sandwich. Keep moving sandwich around on griddle.
Typically, a really great grilled cheese takes 4 - 5 minutes to cook. Continue to check bread color, because you have 1-2 seconds between a really great grilled cheese and a burned grilled cheese.
Lightly baste bread with a bit more butter.
