Ingredients
Tzatziki Sauce:
1/4 c. fresh dill, chopped
1/4 English cucumber, grated with excess moisture squeezed out
2 c. full-fat Greek yogurt
different types of herbs like dill, basil, chives, cilantro or parsley, optional
3-4 garlic cloves, minced
zest of 1 lemon
freshly squeezed juice of 1 lemon
sea salt
freshly ground black pepper, to taste
1 1/2 lb. boneless, skinless chicken breasts
1 1/2 c. cherry or grape tomatoes, halved or quartered
1 English cucumber, diced
1/3 c. pitted Kalamata or favorite olives, sliced
1 medium red onion, diced
1 c. crumbled Feta cheese

Tzatziki Sauce:
Mix all Tzatziki ingredients in a bowl; season with salt and pepper, to taste. Refrigerate until ready to use. (It tastes the best if made a day in advance so that all of the flavors meld together.)
Chicken:
Season chicken on both sides generously with salt and pepper.
Heat oil in a large skillet over medium heat. Add chicken; cook for about 5-7 minutes per side, or until golden brown on the outside and cooked through until the internal temp is 165F / 75C. Once done, place chicken on a platter; top with Tzatziki sauce, cucumbers, tomatoes, olives, onions, and crumbled Feta cheese.
