Everyone will love these Tex-Mex inspired beans. They are very flavorful and delicious. Make them for your next get together or gathering.
1 lb. dried pinto or navy beans
4-7 slices uncooked bacon, diced
1 small white onion, finely diced
1 serrano pepper, stemmed, seeded and diced
4 garlic cloves, minced
1/4 c. chopped fresh cilantro, plus more for garnish
salt and black pepper, to taste
12 oz. bottle Mexican beer
2 1/2 c. chicken stock/broth
lime slices, for garnish (optional)
Soak beans in water at least 8 hours or overnight; drain; rinse well.
In a large skillet over medium-high heat, add bacon; cook, stirring occasionally, until crispy. Add onion, serrano pepper, garlic and cilantro; season with salt and pepper, to taste. Cook until onion is tender. Add bacon mixture to slow cooker. (If slow cooker has a sauté mode, this step can be done in the slow cooker.)
Add beans, beer and stock/broth to the slow cooker; cover; cook on low 6 - 8 hours.
Serve, with lime slices and sprinkled with cilantro right before serving.
