This easy to prepare meal makes dinner time something to look forward to. Serve with your favorite salad and perhaps a vegetable.
1 lb. ground beef
salt and pepper, to taste
3 lb. potatoes, peeled sliced ¼ inch thick
1 c. thinly sliced onion
1 t. paprika
½ t. garlic powder
1 t. dried parsley
1 t. salt
¼ t. black pepper
3 c. shredded sharp Cheddar cheese
½ c. chicken or beef stock/broth
Brown ground beef in skillet; discard fat; season with salt and pepper.
In a small bowl, combine paprika, garlic powder, parsley, salt and pepper.
Spray the crock of a 6 qt. or larger crock pot with cooking spray.
Add half of the potatoes to the slow cooker; sprinkle on half of the onions, half of the seasonings, half of the ground beef and half of the cheese. Repeat the layers.
Drizzle the broth evenly over the layers.
Cover; cook on High for 3 1/2 to 4 hours. Do not uncover during the cooking process or the potatoes will not get soft.
