Mexican Inspired Deviled Avocado

Description

This dish can be served as an appetizer, lunch or maybe even a snack. It's a cross between guacamole and deviled eggs.

Ingredients

1 ripe avocado, cut in half, pit removed
1/3 c. mayonnaise
2 t. minced garlic
2 t. freshly squeezed lime juice (or freshly squeezed lemon juice)
2 hard boiled eggs
3 T. chopped red onion
1 T. chopped cilantro
1-2 t. chipotle powder or to taste (or smoked paprika)
1/4 t. salt
freshly ground black pepper

In a bowl, mix together mayonnaise, garlic and lime juice; set aside.

In another bowl, use a fork to break up eggs until eggs reach a fine crumble. Add mayonnaise; stir until combined; add onion, cilantro, chipotle powder, salt and pepper; stir until everything is incorporated.

Evenly divide and spoon mixture on each avocado half; sprinkle with chipotle powder; garnish with cilantro.

Serve with tortilla chips.
