Kids and adults alike will love this sandwich for breakfast. But don't limit it for breakfast, it's great for lunch or even dinner.
8 eggs
1/4 t. salt
1/4 t. pepper
1/8 c. milk
2 T. butter, divided
8 slices Colby Cheddar cheese
12 strips bacon, cooked
8 slices thick sliced white bread
In a bowl, whisk together the eggs, milk, salt and pepper.
In a large skillet over medium heat, melt 1 T. butter; pour egg mixture into the skillet, rotating while it cooks, making sure eggs cook evenly. When it begins to bubble, flip; allow to cook. If it breaks apart, it's ok, just try to keep eggs in large pieces. Cook about 3 minutes per side.
Transfer eggs to a plate; clean the skillet. Place cheese on each slice of bread; place enough egg to cover bread; place on 3 strips of bacon. Top with a slice of bread. Add a little butter to each slice of bread.
Cook over medium heat, about 3 minutes per side, covered. Add a little water to create steam will to help melt the cheese faster, if desired.
Serve immediately.
