Description
This is a delicious, nice, easy to prepare dinner. You can change it up as you wish using different sausage or veggies, if you wish.
Ingredients
- 2 Kielbasa sausage links, cut into 2-inch pieces
- 8 Yukon potatoes, washed, peeled and cubed
- 1 Spanish onion, cut into chunks
- 8 oz. package baby carrots, cut in halves horizontally
- 4-5 cloves garlic, crushed
- salt and pepper, to taste
- 3 T. olive oil
Steps
- Preheat oven to 350 degrees. Spray a baking/roasting pan with non-stick cooking spray.
- Mix Kielbasa, potatoes, onion, baby carrots, and garlic in prepared baking pan; season with salt and pepper. Drizzle olive oil over the mixture; stir to coat. Cover with aluminum foil.
- Bake for 1 hour; remove aluminum foil; bake until potatoes are completely cooked, about 30 more minutes.
