30 minute dishes make life much simpler, but need to be delicious too. This chicken casserole is loaded with cheese and marinara sauce, seasonings, and is topped with crushed pork rinds or Parmesan cheese.
2 boneless, skinless chicken breasts, each cut in half lengthwise
1 T. olive oil
1 t. Italian seasoning
1 t. garlic powder
salt and freshly ground black pepper
1 c. marinara sauce or tomato sauce
crushed red pepper flakes, optional
1 c. grated Parmesan cheese
1 1/2 c. shredded Mozzarella cheese
1/2 c. crushed pork rinds, if desired for topping*
1 T. freshly chopped basil, for garnish
Preheat oven to 400 degrees. Lightly grease a baking dish with cooking spray.
In a shallow bowl, marinate chicken breasts with olive oil, garlic powder, salt, pepper, Italian seasoning and crushed red pepper flakes for 5 minutes.
Place chicken in the prepared baking dish; pour marinara/ tomato sauce over the top; sprinkle with Parmesan and shredded Mozzarella cheeses. Lightly sprinkle the crushed pork rinds over the top.
Bake for 25 minutes, until chicken is cooked through and cheese is melted and bubbly.
Serve immediately garnished with freshly chopped basil.
4 servings.
*A little Parmesan cheese can be substituted for the pork rinds, if desired.
