Turn the classic Chicken Parmesan into a delicious, easy to make casserole that takes less than 1 hour from start to finish. It's so delicious, it will become one of your favorite recipes.
2 lb. chicken thighs, diced
½ t. kosher salt
¼ t. black pepper
½ t. garlic powder
24 oz. jar marinara or spaghetti sauce
½ c. shredded Parmesan cheese
1 ½ c. shredded Mozzarella cheese
1 c. panko, toasted
2 T. olive oil
¼ c. fresh herbs like parsley, basil, oregano, etc., chopped
cooked spaghetti, for serving
Preheat oven to 350 degrees F. Spray an 11½ x 7½ inch baking dish with cooking spray.
Place diced chicken into the dish; season with salt, pepper and garlic powder. Pour marinara/spaghetti sauce over the top; stir. Sprinkle both cheeses over the top.
In a small bowl, combine panko, herbs and olive oil; spread evenly over the top of the cheese layer. Cover with aluminum foil.
Bake for 30 minutes. Remove foil; bake for 15 minutes more, until chicken has cooked through and casserole has begun to brown and bubble.
Serve over spaghetti.
6-8 servings.
Tip: Make in advance and freeze it it. Let it thaw in refrigerator overnight and then bake.
