Holy Yum Chicken

Description

This chicken dish will be the most requested dinner recipe at your house because the chicken is moist and fork tender and the sauce is amazing. That's why it's called Holy Yum! You'll like it because it's super simple to prepare.

Ingredients

1 1/2 - 2 lb. boneless skinless, chicken thighs, most fat cut and discarded
1/2 c. Dijon mustard (no substitutes)
1/4 c. pure maple syrup (no substitutes, nothing fake)
1 T rice wine vinegar, seasoned or unseasoned
1 garlic clove, minced
1/4 t. salt
1/4 t. pepper
1 T. cornstarch
2 t. fresh rosemary, for garnish

Preheat oven to 450 degrees. Line an 8 x 8 inch oven-proof pan with 2 layers of aluminum foil with the shiny side up towards where the chicken will be; spray with non-stick cooking spray.

In a small bowl, whisk together mustard, syrup, vinegar, garlic, salt and pepper.

Place chicken in prepared pan; spread mustard mixture on top; turn chicken around in sauce to coat it well.

Bake, uncovered, for 40 minutes.

Remove from oven; let chicken sit for 5 minutes; transfer to a platter; cover to keep warm. Do NOT discard the liquid!

Immediately whisk cornstarch into the hot liquid in the pan, creating a nice, thick sauce. If it isn't thickening after 1 T, add a little more. If it's too thick, thin with a little water or chicken stock/broth.

Serve chicken with sauce spooned over the top and garnished with fresh rosemary.
