Instead of having tacos on Taco Tuesday, try this delicious taco casserole. It's prepared with all of the same ingredients and is just another way of enjoying one of your favorite meals.
1 lb. ground beef
1 small yellow onion, diced
1 oz. taco seasoning (equivalent to (2 T.)
16 oz. refried beans
¾ c. sour cream
2 c. shredded cheddar cheese
¼ c. black olives, sliced
1/3 c. tomatoes, diced
¾ c. crunchy toppings, tortilla chips Doritos, and/or Fritos
Garnish:
1/3 c. shredded lettuce
chopped green onions, optional
chopped cilantro, optional
sour cream, optional
Preheat oven to 350 degrees. Spray a 9x13 baking dish to non-stick cooking spray.
Add ground beef and diced onions to a large skillet; cook and crumble meat over medium heat until the meat is cooked through; discard excess grease.
Add 3/4 c. water and taco seasoning; bring to a boil; reduce heat; simmer for 5 minutes, stirring occasionally; remove from heat.
Spread refried beans in an even layer in prepared baking dish; spread sour cream on top; spread on ground beef mixture; top with cheese.
If baking immediately: Bake, uncovered for 15 minutes or until cheese has melted and casserole is hot.
If preparing in advance, let cool; cover; refrigerate until ready to bake.*
To bake: Bake, covered for 25 minutes; remove cover; bake for another 5 minutes.
Add Toppings:
Top casserole with black olives, tomatoes, and crunchy toppings and more cheese if desired.
Bake uncovered for 8 minutes.
Serve and let everyone choose their own garnishes.
