This 30 minute dish will make you and your family happy. You, because it's easy, the family because it's so good. Customize to your taste with onion and/or bell peppers, if you wish.
16 oz. box ziti
24 oz. jar marinara sauce
1 lb. ground, spicy Italian sausage
12 oz. mushrooms, stemmed and thinly sliced (shitake, baby bellas or button mushrooms)
8 oz. Fontina cheese, shredded, divided
1/2 c. panko bread crumbs
1/4 c. chopped fresh parsley
1 T. olive oil
Preheat oven to 425 degrees.
Heat a very large oven-proof skillet over medium heat. Add sausage, breaking up while cooking; cook 4 minutes. Add mushrooms; cook, stirring frequently, about 4 minutes more or until sausage is completely browned and mushrooms are softened. Stir in marinara sauce.
Meanwhile, bring a large pot of 4 - 6 quarts of well salted water to a rolling boil; add ziti; stir gently; cook pasta about 10 minutes or according to package directions; remove from heat; drain well.
Gently stir the pasta and half of the cheese into sausage mixture; sprinkle with remaining cheese.
In a small bowl, stir together bread crumbs, parsley and oil; sprinkle over cheese.
Bake about 5 minutes or until cheese is melted and topping is lightly browned. Let stand 5 minutes before serving.
