Cold weather is coming and there's nothing better than a bowl of homemade soup. This one is quick and easy because it uses rotisserie chicken. But best of all, it's truly delicious.
1 T. canola oil
2 T. unsalted butter
1 medium onion, diced
2 medium carrots, peeled and chopped
2 celery stalks, chopped
1 t. red pepper flakes, optional
1 t. salt
1 t. freshly ground black pepper
8 c. good quality chicken stock
2 lb. rotisserie chicken, meat removed and shredded (about 3 c.)
3/4 lb. bucatini pasta (or preferred pasta)
2 T. fresh chopped parsley
crusty bread, for serving
In a large saucepan, heat oil with butter over medium heat. Add onion, carrots, celery and red pepper flakes, if using; cook until softened, about 5 minutes; season with salt and pepper; add chicken stock. Turn heat to high; bring to a simmer for 10 minutes.
Add pasta; turn heat to medium-high; cook 8 - 10 minutes or until pasta is al dente; add chicken; reduce heat to medium; cook 2 minutes.
Season to taste; add parsley.
Serve hot with crusty bread.
