Fall is the perfect time to serve this wonderful savory and sweet pork loin served with an apple glaze. Your family or guests will absolutely love it. Serve it with your favorite sides.
Pork Roast:
2 - 3 lb. pork loin, trimmed and tied
1 1/2 t. salt
1/2 t. black pepper
1 T. olive oil
2 T. Dijon mustard
1 T. apple cider vinegar
Apple Glaze:
2 T. butter
1 T. cornstarch
1 c. apple juice
1 T. Dijon mustard
1 T. brown sugar
1 t. apple cider vinegar
Preheat oven to 375 degrees.
Season pork loin with salt and pepper.
Heat olive oil in a heavy, oven-safe skillet over medium-high heat. Sear loin until all sides are browned, about 2 - 3 minutes per side.
In a small bowl, whisk together mustard and apple cider vinegar; brush over pork roast.
Place skillet in oven; cook pork to an internal temperature of 145 degrees, about 30 - 40 minutes depending on the size of the roast, using a probe thermometer for temperature accuracy.
Meanwhile, make apple glaze:
Melt butter in a saucepan over medium-high heat; whisk in cornstarch until absorbed; pour in apple juice; whisk in mustard, brown sugar and vinegar, whisking until sauce is thickened. This should take just a couple of minutes.
Remove pork from oven; let rest about 5 minutes before cutting. Slice meat.
Serve hot, drizzled with the apple glaze.
