This is an easy, no fuss Chinese dish that turns out better than take out. Serve it with your favorite rice, if desired.
2 lb. chicken breasts, boneless, skinless , about 4 pieces, cut into small pieces
1/4 c. flour all purpose
1/2 t. black pepper
1 T. canola oil
1/2 c. low-sodium soy sauce
1/4 c. rice vinegar
1/4 c. ketchup
2 T. brown sugar
2 garlic cloves, minced
1/2 t. fresh ginger, grated
1/4 t. red pepper flakes
1/2 c. cashews, unsalted
Combine flour and pepper in a ziplock bag; add chicken; shake to coat with flour mixture.
Heat oil in skillet over medium-high heat; brown chicken, about 2 minutes per side. Place chicken in slow cooker.
Combine soy sauce, vinegar, ketchup, sugar, garlic, ginger and pepper flakes in small bowl; pour over chicken. Cook on Low for 2 - 3 hours.
Add cashews; stir. Serve.
