These chicken burgers topped with guacamole have the most amazing taste. They are tender, juicy and are simple to make. Serve them on buns with tomato slices and lettuce leaves just like a regular burger.
1 lb. lean ground chicken
1/4 c. green onions, chopped from about 3-4
1/3 c. cilantro, chopped
1-2 garlic cloves, minced
freshly squeezed juice from 1/2 of a lime
1/2 c. white cheddar cheese
1 t. cumin
1/2 t. paprika
1/4 t. salt, or more as needed
1/4 t. pepper
2 medium avocados, smashed with a fork
2 tomatoes, 1 diced and 1 sliced
Lawry's seasoned salt
black pepper
3/4 t. freshly squeezed lime or lemon juice
lettuce leaves, for serving
4 hamburger buns, for serving
Combine chicken, chopped onions, cilantro, garlic, lime juice, cheddar cheese, cumin, paprika, salt and pepper in a mixing bowl; mix lightly; divide into 4 patties.
In another bowl, combine smashed avocados, diced tomato, seasoned salt, pepper and lime/lemon juice; set aside.
Barbecue patties on a grill or on a hot skillet on the stovetop until cooked through, 5-6 minutes per side.
Serve on buns with reserved guacamole and a tomato slice.
