Beer Cheese Potato Soup with Spicy Turkey Sausage

Description

Winter weather will soon be upon us so it will be the perfect time to make a hearty, comforting and satisfying soup to warm up those bones. It's made with a spicy turkey sausage, cheddar cheese, potatoes and your favorite beer.

Ingredients

19.5 oz. spicy turkey sausage
6 T. butter
1 white onion, diced
1 c. chopped carrots
1 c. chopped celery
5 cloves garlic, minced
2 t. dried oregano
1 t. dried thyme
5 T. flour
3 - 14.5 oz. cans chicken stock/broth
12 oz. can beer
2 lb. russet potatoes, diced in 1/2 inch pieces
1 c. heavy cream
8 oz. sharp cheddar cheese, shredded
Kosher salt
freshly ground black pepper
Garnish: sliced green onions, shredded cheddar cheese

Heat a large stockpot or Dutch oven over medium heat. Add turkey sausage; brown, crumbling with a spatula until cooked through. Remove from pot; set aside.

Heat butter in the same pot over medium-high heat. Add onion, carrots and celery; season with a large pinch of salt and pepper. Cook, stirring frequently for 10-12 minutes. Turn heat to medium; add garlic, oregano and thyme; cook for 1 minute. Add flour; stir to coat veggies; cook for 1 minute, stirring frequently. Stir in beer, chicken stock/broth and potatoes; season with another pinch of salt and pepper. Cover; turn heat to medium- high; bring to a simmer.

When it starts to simmer, turn heat to low; cover; simmer 10-12 minutes or until potatoes are fork tender, stirring occasionally to prevent potatoes from sticking to the bottom of the pot.

Remove soup from heat. Blend half of the soup mixture until it's smooth and creamy then pour back into pot. Stir in heavy cream and shredded cheese;
add cooked sausage back into the pot. Heat soup over medium heat for several minutes, until sausage is heated through.

Serve garnished with green onions and shredded cheddar cheese.
