Wondering what to do with that leftover turkey? Here is an idea that everyone is sure to love! It's sandwiches prepared and baked in the oven and served with your favorite canned soup.

Ingredients

2 - 11 oz. cans refrigerated French bread
cooking spray
1 avocado, mashed
salt and pepper, to taste
4 slices Colby Jack cheese
4 slices roasted turkey
4 pieces green leaf lettuce
1/2 red bell pepper, sliced
4 - 18 oz. canned soup of choice

Preheat oven to 350 degrees.

Place soup in bowls or saucepan to heat later.

Generously spray the inside of 4 empty 18 oz. soup cans with wrappers removed with cooking spray; place on a baking sheet.

Cut each loaf of refrigerated French bread in half so that there 4 pieces total. Place one upright inside each soup can.

Bake 20 - 25 minutes until bread is baked through and dark golden brown on tops. Remove bread from cans; if it's doughy, return cans to oven and bake another 5 minutes. Remove baking sheet from oven; cool bread completely on a cooling rack.

Heat soup.

Slice domed tops off each piece of bread. Use fingers to remove the middle of the bread; use fingers to push bread to the edges to end up with a hollow cavity. The extra bread can be used later to dip in the warmed soup from the soup cans.

Mix together avocado and salt and pepper; spread along the inside bottom and sides of each bread cavity. Fill with cheese, turkey, lettuce and red bell pepper slices.

Serve sandwiches with the warmed soup, using the extra bread pieces for dipping.
