Just a few minutes of prep and your oven will get you a delicious chicken casserole that is full of flavor. Serve it over rice, your favorite pasta or potatoes to take advantage of the wonderful sauce.
1 jar dried beef, enough to cover the bottom of a 9x12 baking dish
8 boneless, chicken breasts
8 slices of bacon, raw
16 oz. sour cream
2 cans cream of mushroom soup
salt and pepper, to taste
cooked rice, for serving, optional
Preheat oven to 300 degrees. Grease a 9x12 inch baking dish.
Cover the bottom of the dish with the dried beef.
Wrap 1 piece of raw bacon around each breast; lay on top of the dried beef.
In a bowl, stir together the sour cream and soup; pour over the chicken breasts. Season with salt and pepper.
Bake 2- 3 hours or until chicken is done and bacon is crispy.
Serve over rice.
