Out of ideas for Meatless Mondays dinners? Here's one that you and your family will enjoy. It's easy to make and so good.
2 eggs, beaten
16 oz. container 2% milkfat Low Fat Cottage Cheese
10 oz. pkg. frozen chopped spinach, thawed, well drained
3 c. 2% milk shredded Mozzarella cheese, divided
1/2 c. grated Parmesan cheese, divided
24 oz. jar tomato and basil pasta sauce, divided
9 lasagna noodles, cooked
Preheat oven to 350 degrees. Spray a 13x9 inch baking dish with non-stick cooking spray.
Mix eggs, cottage cheese, spinach, 2 c. Mozzarella cheese and 1/4 c. Parmesan cheese until blended.
Spread 1 c. pasta sauce onto bottom of the prepared baking dish; cover with 3 lasagna noodles and half of the cottage cheese mixture; repeat layers. Top with remaining noodles, pasta sauce, mozzarella and Parmesan cheeses.
Bake 45 minutes or until heated completely through. Remove from oven. Let stand 10 minutes before cutting.
Serve.
