Do you need a meal to warm up from the cold weather? This soup is a wonderful bowl of comfort. It's prepared with many ingredients that you may already have and can be ready and on the table in about 30 minutes.
1 lb. mild Italian sausage, casings removed
1 large Vidalia onion. diced
2 garlic cloves, minced
1 T. Italian Seasoning blend
5 c. chicken stock, divided
14.5 oz. can diced tomatoes
15.5 oz. can cannellini beans, rinsed and drained
1/2 c. small cut pasta like ditallini
2 c. baby spinach
grated Parmesan cheese, for serving
Place a large pot over medium-high heat; add sausage, breaking it up into small pieces with a fork as it browns; cook until the sausage is no longer pink. Use a slotted spoon to transfer sausage to a bowl; discard all but 1 T. fat.
Add onions to the pot; cook onions until translucent, about 4-5 minutes; add garlic; cook for 1 minute, until fragrant. Stir in Italian seasoning and 1/4 c. chicken stock to deglaze the pan, scraping up any brown bits with a wooden spoon.
Stir in tomatoes, beans, sausage and remaining chicken stock. Add pasta; bring soup to a boil; cook for 6-7 minutes or until pasta is al dente. Stir in the spinach.
Serve immediately topped with grated Parmesan cheese.
