Give your guacamole an interesting twist by first grilling the avocado, onion, tomatillos and jalapeños on a grill. It give the guacamole an understated smoky flavor that is truly unique.
2 ripe avocados, halved and pitted
1 small onion, sliced ¼ inch thick
2 tomatillos, husks removed, rinsed and halved
1 - 2 jalapeño peppers, halved, seeded and deveined
¼ c. finely chopped cilantro
2 T. freshly squeezed lime juice
1 clove garlic, minced
1 t. coarse salt
freshly ground black pepper
tortilla chips, for serving
Oil then preheat grill.
Place avocados, onion, tomatillos and jalapeños on prepared grid over medium-high heat; grill until lightly charred on all sides, about 2 - 3 minutes.
Scoop out avocado flesh; place in medium bowl; mash.
Finely chop onion, tomatillos and jalapeños; add to avocado. Stir in cilantro, lime juice, garlic, salt and pepper until well mixed.
Serve with tortilla chips.
