Give your guacamole an interesting twist by first grilling the avocado, onion, tomatillos and jalapeños on a grill. It give the guacamole an understated smoky flavor that is truly unique.
Ingredients
- 2 ripe avocados, halved and pitted
- 1 small onion, sliced ¼ inch thick
- 2 tomatillos, husks removed, rinsed and halved
- 1 - 2 jalapeño peppers, halved, seeded and deveined
- ¼ c. finely chopped cilantro
- 2 T. freshly squeezed lime juice
- 1 clove garlic, minced
- 1 t. coarse salt
- freshly ground black pepper
- tortilla chips, for serving
Steps
- Oil then preheat grill.
- Place avocados, onion, tomatillos and jalapeños on prepared grid over medium-high heat; grill until lightly charred on all sides, about 2 - 3 minutes.
- Scoop out avocado flesh; place in medium bowl; mash.
