This hearty chili really hits the spot with its unique flavors and 2 kinds of beans. It's not really spicy at all. It's healthier than beef chili but you can't even tell that it's made with ground turkey.
2 T. olive oil
1 medium yellow onion, chopped
6 cloves garlic, chopped
2 T. chili powder
1 t. oregano
1 t. cumin
1 lb. ground turkey
4 chipotle peppers from canned chipotles in adobo, chopped*
1 T. adobo sauce from the can
2 - 14.5 oz. cans fire roasted diced or crushed tomatoes (or 1 of each)
1 can black beans, drained
1 can kidney beans, drained
1 c. water
1/2 T. unsweetened cocoa powder
sea salt, to taste
Heat olive oil in a large pot over medium-high heat; add onion, garlic, chili powder, oregano and cumin. Saute for about 5 minutes, stirring occasionally, until onion is softened. Add turkey, chipotles and adobo sauce; continue to cook over medium-high heat, breaking up turkey, until turkey is cooked through. Stir in tomatoes, beans, water, cocoa powder and sea salt; bring to a boil; reduce heat to medium-low; simmer partially covered for 30 minutes, stirring occasionally.
Serve with desired chili toppings.
*This chili isn't very spicy, but if wanting even less spice, use 2-3 chipotle peppers instead of the 4.
6 servings.
