Description
You can taste the love in this quick and easy to prepare soup. It's healthy, very nutritious and is a great source of protein, fiber and potassium.
Ingredients
- 2 T. olive oil
- 1 c. finely chopped onion
- 1/2 c. finely chopped celery
- 1/2 c. finely chopped carrots
- 3 cloves garlic, finely chopped
- 1 can San Marzano Cento tomatoes
- 3 t. salt
- black pepper, to taste
- 1 lb. lentils
- 2 qt. water
- handful chopped parsley, for garnish
Steps
- In a soup pot or Dutch oven, heat olive oil. On medium heat, saute onion, celery and carrots for about 5- 7 minutes; add garlic; saute 30 seconds. Crush tomatoes; add to pot; add salt and pepper.
- Cook on medium heat for 5 more minutes; add lentils; add water. Cook or simmer for about 35-40 minutes or until lentils are tender.
- Serve, garnished with parsley.
