This just might turn out to be the best thing that you have made in your slow cooker ever! It's easy, delicious and flavorful.
Chicken:
1 T. olive oil
1 lb. boneless, skinless chicken breasts, cut into 1-inch chunks
kosher salt
freshly ground black pepper, to taste
1 c. raw cashews
2 green onions, sliced
Sauce:
1/4 c. reduced-sodium soy sauce
2 T. ketchup
2 T. unseasoned rice vinegar
1 T. brown sugar
3 cloves garlic, minced
1 T. freshly grated ginger
1/4 t. crushed red pepper flakes, optional
cooked rice, for serving
In a small bowl, whisk together soy sauce, ketchup, rice vinegar, brown sugar, garlic, ginger and red pepper flakes; set aside.
Heat olive oil in a large skillet over medium-high heat.
Season chicken with salt and pepper to taste; add to the skillet; cook, stirring occasionally, until browned, about 2 minutes. Place chicken in a slow cooker; stir in soy sauce mixture; gently stir to combine. Cover; cook on Low for 2-3 hours. Stir in cashews; cook on Low for another 15 minutes.
Serve immediately on cooked rice, garnished with green onions.
