Make chicken apple sausage patties at home knowing all of the ingredients instead of buying packaged ones at the store. It's healthier and tastier too with savory spices that can be adjusted to your own preferences.
1 lb. ground chicken (or ground turkey)
1 apple, like Granny Smith, Gala or Honeycrisp, peeled and finely diced
2 t. canola or olive oil
1 small onion, finely diced
1-2 T. finely chopped fresh sage
1 T. packed light brown sugar
1/2 t. fennel seed, chopped
¾ t. salt
¼ t. freshly ground pepper

Heat oil in a large non-stick skillet over medium heat; add onion; cook, stirring, until starting to soften, about 2 minutes. Add apple; cook, stirring, 2 minutes. Transfer to a large bowl; cool for 5 minutes. Wipe out the pan with paper towels.
Add chicken, sage, sugar, fennel, salt and pepper to the bowl; gently mix to combine.
Generously coat skillet with cooking spray; place over low heat. Use a 1/3 cup measure to scoop out 4 portions of the sausage mixture into skillet, flattening each into a 3 inch patty. Cover skillet, cook until patties are browned and cooked through, about 3 minutes per side, adjusting heat as necessary to prevent burning. Transfer patties to a platter; cover to keep warm. Spray skillet again with cooking spray; repeat with remaining chicken mixture.
Tip: The cooked sausage patties can be frozen in an airtight container for up to 3 months.
