This casserole is a easy one to make with simple ingredients. It's a flavorful, delicious dish that's filled with creamy goodness and will warm you up on cold winter days.
1 can Grands biscuits (8 biscuits)
1 T. butter
2 c. frozen vegetable variety (corn, peas, carrots and green beans)*
2 c. shredded rotisserie chicken (or any cooked chicken)
1 c. milk
1 can cream of chicken soup
salt and pepper, to taste
2 T. butter, melted
1/2 t. garlic powder
Preheat oven to 375 degrees. Spray a 9 x 13 baking pan with non-stick spray.
Place biscuits on a baking sheet. Bake for 8 minutes. Remove biscuits from oven but keep oven on. They will be partially baked at this point.
While biscuits are baking, in a large skillet over medium-high heat, melt the butter; add frozen vegetables; cook for 10-15 minutes.
Add the chicken, milk and cream of chicken soup; season with salt and pepper, to taste; stir to combine; cook for 5 minutes until mixture is fully heated and bubbly hot.
Pour into prepared 9 x 13 dish; spread out evenly. Place the pre-baked biscuits on top of the casserole with the baked side down and raw side up.
Place the butter in a small microwaveable dish; add garlic powder; microwave until melted in 30 second intervals, covered; pour over the top of the biscuits.
Bake for 10-12 minutes or until biscuits are golden brown.
6 servings.
*Any vegetable variety you like can be used or add fresh vegetables to the frozen mixture such as mushrooms, celery, etc.
