Cheese Ravioli Soup with Sausage

Description

This delicious soup is easy to make and very satisfying and comforting. It's made with bulk sausage, onion, bell pepper, tomato sauce and frozen cheese ravioli.

Ingredients

1 lb. bulk sausage, like Jimmy Dean All-Natural bulk sausage
1 medium onion, finely chopped
1 red bell pepper, seeded and cored finely chopped
3 cloves garlic, finely minced
10–12 c. baby spinach
1 t. basil
1 t. oregano
15 oz. can tomato sauce
4 c. unsalted chicken stock
10 oz. frozen cheese ravioli
1 c. shredded Mozzarella, divided (or combination Mozzarella and Provel cheese)

Brown sausage in saucepan over medium heat; discard excess grease; return to heat.

Add onion and bell pepper; cook until soft, about 4-5 minutes. Add basil and oregano; stir. Add garlic; cook 1 minute. Add spinach; cook until wilted; about 2-3 minutes. Add chicken stock and tomato sauce; simmer for 30-40 minutes.

Preheat broiler.

Add ravioli; simmer for 7-10 minutes.

Serve in oven-proof bowls, with each portion topped with 1/4 c. cheese. Place under the broiler just until cheese is melted and lightly browned.

Serve immediately.
