Description
This delicious soup is easy to make and very satisfying and comforting. It's made with bulk sausage, onion, bell pepper, tomato sauce and frozen cheese ravioli.
Ingredients
- 1 lb. bulk sausage, like Jimmy Dean All-Natural bulk sausage
- 1 medium onion, finely chopped
- 1 red bell pepper, seeded and cored finely chopped
- 3 cloves garlic, finely minced
- 10–12 c. baby spinach
- 1 t. basil
- 1 t. oregano
- 15 oz. can tomato sauce
- 4 c. unsalted chicken stock
- 10 oz. frozen cheese ravioli
- 1 c. shredded Mozzarella, divided (or combination Mozzarella and Provel cheese)
Steps
- Brown sausage in saucepan over medium heat; discard excess grease; return to heat.
- Add onion and bell pepper; cook until soft, about 4-5 minutes. Add basil and oregano; stir. Add garlic; cook 1 minute. Add spinach; cook until wilted; about 2-3 minutes. Add chicken stock and tomato sauce; simmer for 30-40 minutes.
- Preheat broiler.
