Description
This satisfying soup is a great meal to make in about 30 minutes for busy families. It's made with ground beef, canned tomatoes, pasta, frozen veggies and lots of delicious herbs.
Ingredients
- lb. lean ground beef
- 1/2 c. onion, diced
- 6 c. beef broth
- 14 oz. diced tomatoes
- 2 T. tomato paste
- 1 t. Worcestershire sauce
- 1/2 t. oregano
- 1/2 t. dried basil
- garlic powder, optional
- 1 1/2 c. elbow macaroni, uncooked*
- 1 1/2 c. frozen mixed vegetables
- freshly shredded Parmesan cheese, for serving, optional
Steps
- In a large pot, brown ground beef and onion until no pink remains; discard excess fat.
- Add broth, tomatoes, tomato paste, Worcestershire sauce and seasonings; bring to a boil; simmer 5 minutes.
- Stir in pasta and vegetables; simmer 8 minutes or until pasta is tender. Season with salt and pepper, to taste.
