A combination of ground beef and ground turkey make these salisbury steaks a little lighter and healthier than the classic dish. Serve it with your favorite potatoes, egg noodles or rice to take advantage of its wonderful gravy.
1 1/2 t. oil
3/4 c. onion, minced
1 lb. 93% lean ground beef
1 lb. 93% lean ground turkey
1/2 c. dry bread crumbs
1 large egg
1 large egg white
2 c. beef broth, divided
1/4 t. salt
1/8 t. black pepper, to taste
8 oz. sliced mushrooms
2 T. all-purpose flour
2 T. tomato paste
1 t. red wine vinegar
2 t. Worcestershire sauce, to taste
1/2 t. mustard powder
1/4 c. water
chopped parsley for garnish, optional
Sauté onion in oil over medium heat until golden brown, about 5 minutes.
In a large bowl, combine half of the sautéed onion, both ground meats, bread crumbs, egg, egg white, 1/4 c. beef broth, salt and pepper. Shape into 8 oval patties.
In a large deep skillet over medium-high heat, brown both sides of patties, about 4 - 5 minutes per side; transfer to a plate; set aside.
Add mushrooms to the same skillet; season with salt and pepper; sauté 2-3 minutes. Place patties in the skillet with the mushrooms.
In a small bowl, blend flour and remaining broth until smooth; mix in remaining onions, tomato paste, vinegar, water, Worcestershire sauce and mustard powder; pour over meat and mushrooms in the skillet. Cover; cook on low heat for 20 minutes, stirring occasionally.
