Whether you are feeding overnight guests or your family, these breakfast roll-ups make a great breakfast. Choose a topping or even several toppings and start the day off with a special treat.
4 large eggs
1/4 c. milk
2 T. maple syrup, plus more for serving
2 T. light brown sugar
1 t. vanilla extract
1/2 t. cinnamon
1/4 t. salt
4 T. unsalted butter, divided
8 slices white bread
Toppings:
peanut butter and jelly
apple pie filling and walnuts
hazelnut spread and banana
cheddar cheese, scrambled egg and crisp bacon
scrambled egg and precooked sausage links
strawberry and cream cheese
blueberries and cream cheese
pumpkin pie filling
In a large bowl, whisk together eggs, milk, maple syrup, brown sugar, vanilla, cinnamon and salt.
In a large skillet, melt 1 T. butter over medium heat. While butter is melting, dip bread into egg mixture; allow to soak for about 20 seconds; place bread on a large platter.
Once butter is melted, add 2 slices of bread to skillet; cook until golden brown, about 3 minutes per side; place French toast onto a cooling rack. Repeat until all bread has been cooked. Allow toast to cool.
Flatten cooled French toast with a rolling pin; add desired toppings; roll toast around toppings; place on a parchment-lined baking sheet, seam side down, or freeze for later in a resealable freezer bag.
Thaw, if frozen.
Bake at 400 degrees until golden brown, about 5-7 minutes.
Serve with warm maple syrup.
