1 t. olive oil
½ c. green bell pepper, diced
¼ c. onion, diced
¾ c. mushrooms, sliced
1 clove garlic, minced
16 oz. liquid eggs
½ c. shredded Cheddar cheese
4 oz. ham, cut into ½ inch cubes
cooking spray
1 rolled pie crust
fresh parsley, for garnish
Preheat oven to 400 degrees.
In a medium skillet, heat oil over medium-high heat; sauté green pepper, onions, mushrooms and garlic until softened, about 5 minutes; remove from heat.
Transfer ingredients from skillet to a large bowl, mix with liquid eggs, cheese and ham.
Grease a 9 inch pie plate with cooking spray. Unroll pie crust; press into bottom of plate; pinch outer edges of crust. Evenly pour and spread egg mixture inside crust.
Bake until crust is golden brown and egg is set, about 35-40 minutes. Let cool 5-10 minutes.
Garnish with fresh parsley. Serve.
