Use your crock pot to make an easy, cheesy taco like dish. Serve with a salad, if desired.
1 lb. ground beef
2 cloves garlic, minced
1 oz. packet taco seasoning
10.5 oz. Cheddar cheese soup
4 c. sliced potatoes
2 c. Cheddar cheese, shredded
1 c. beef broth
Brown ground beef with garlic; discard excess grease.
Place potato slices in the bottom of a lightly greased 6 quart crock pot. Spread ground beef evenly on top of potatoes. Sprinkle taco seasoning evenly on top; spoon soup evenly on top of that; sprinkle shredded cheese evenly across the top. Gently pour beef broth evenly around the crock pot.
Cover; cook on Low for 4 - 5 hours or on High for 2 - 2 1/2 hours.
If desired, using an oven-safe crock, place in broiler on High for about 1 1/2 minutes to brown the cheese on top. Allow to cool for 10-15 minutes before serving.
