Now you don't need to stand over the cooktop to make everyone but yourself hot pancakes. This is made easily in a sheet pan and tastes just as good or even better. It's perfect for when company comes.
3 c. all-purpose flour
2 T. baking powder
2 T. sugar
1/2 t. salt
2 1/2 c. milk
2 large eggs
8 T. unsalted butter, melted
1 c. strawberries, sliced
1 c. blueberries
butter syrup, for serving
Preheat oven to 425 degrees. Spray a half-size sheet pan (18 x 13 with 1-inch sides) with baking/cooking spray.
In a large bowl, whisk together dry ingredients; add wet ingredients; combine fully.
Pour batter into prepared pan, spreading evenly. Place strawberries and blueberries evenly over the batter.
Bake for about 15 minutes until golden brown.
Serve with butter and your favorite syrup.
