This low carb, slimmed down quiche will amaze you at how tasty it is. It's great served as breakfast, brunch, lunch or even a light dinner.
non-stick cooking spray
3 c. chopped broccoli florets
1 T. water
1 c. grated cheddar cheese
2/3 c. 2% milk
1/4 c. half and half cream
5 large eggs
3/4 t. kosher salt
1/8 t. freshly ground black pepper
pinch freshly grated nutmeg
Preheat oven to 350 degrees. Spray a dish/plate generously with non-stick cooking spray.
Steam chopped broccoli florets in microwave with 1 T. water until tender crisp and green but not mushy, about 2 1/2 - 3 minutes.
Evenly spread out broccoli in prepared pie dish; top evenly with cheddar cheese.
Make a custard mixture by whisking together milk, half and half, eggs, salt, pepper and nutmeg; pour custard into pie dish.
Bake 35 - 40 minutes, or until center is set.
Serve.
