Meatball Stroganoff Biscuit Casserole for 2

Description

What could be better than dinner going from oven to table in as little as 1 hour? Even better than that, this casserole is really delicious. Serve with a side salad and/or a vegetable, if desired.

Ingredients

4 c. frozen cooked Swedish-style meatballs, thawed (from a 12 oz. package)
non-stick cooking spray
12 oz. jar beef gravy
1/3 c. sliced mushrooms, drained (from a 4 oz. jar)
1/4 c. frozen pearl onions, thawed
1/4 c. sour cream
1 t. Worcestershire sauce

2 Pillsbury Grands Frozen Buttermilk Biscuits
2 t. chopped fresh parsley for garnish, optional

Preheat oven to 375 degrees. Spray a round, 1 qt. glass baking dish with non-stick cooking spray.

In a medium microwavable bowl, microwave meatballs on medium for 2 - 4 minutes or until thawed.

In an 8 inch saucepan, mix thawed meatballs and remaining ingredients, except for biscuits and parsley; cook over medium heat 5 - 8 minutes, stirring frequently, until mixture is bubbly and thoroughly heated.

Pour piping hot mixture into prepared baking dish. Arrange frozen biscuits over top.*

Bake 25 to 30 minutes or until biscuits are deep golden brown and filling is bubbly. Sprinkle individual servings with parsley.

2 servings.

*Casseroles topped with dough must be assembled while the filling is piping hot to ensure even cooking from underneath as well as on the surface or else the topping will bake at the surface but remain doughy next to the filling.
