Your family will love this taco inspired dish. It's a taco in the form of a casserole. It's the best of both worlds.
2 lb. lean ground beef (or lean ground turkey)
1 onion, chopped
2 - 1 oz. packages taco seasoning mix
1 1/2 c. water
2 c. Fritos corn chips
8 oz. pkg. shredded Colby and Monterey Jack cheeses
2 1/2 c. shredded lettuce
3/4 c. chopped tomatoes
sour cream, for serving, optional
Preheat oven to 375 degrees. Grease an 11x7 inch baking dish with non-stick cooking spray.
Brown meat and onions in large skillet; discard excess grease. Stir in taco seasoning mix and water; cook as directed on taco seasoning package.
Spoon into prepared baking dish; top with Fritos corn chips and cheese; cover.
Bake for 30 minutes or until meat mixture is heated through and cheese is melted, uncovering for the last 10 minutes.
Serve topped with lettuce and tomatoes and a dollop of sour cream, if desired.
