The family will love this taco casserole so much that they will ask you to make it often. It's easy to prepare and a nice change from traditional tacos.
1 lb. extra lean ground beef
1 oz. taco seasoning (3 T.)
1⅓ c. salsa
2 c. diced bell peppers, (combo of red, orange and yellow)
1 c. diced red onion
7.5 oz. pkg. Pillsbury biscuits, (10 biscuits in the pack, the ones In the 4 value pack, if you can't find that size, buy the bigger size and use equal weight)
1 c. reduced fat 3 blend shredded cheese
green onion
fat-free sour cream for topping, if desired
Preheat oven to 350 degrees. Spray a 9x13 casserole dish with non-stick cooking spray; set aside.
Cook ground beef in a in a skillet on the cooktop; discard excess grease; add taco seasoning; simmer for several minutes.
While ground beef is cooking, dice bell peppers and onion.
Cut each biscuit into 6 pieces; set aside.
Mix ground beef and salsa together.
Place half of the biscuit pieces in the bottom of prepared casserole dish; top with half of the meat mixture, half of the bell peppers and onions and half of the cheese. Repeat layers. Sprinkle on the chopped green onion.
Loosely cover with aluminum foil. Bake for 35 minutes; remove foil; bake for 15 minutes.
Let cool for 5 minutes before cutting into 6 pieces. Top with a spoon of sour cream, if desired.
