This chicken dish is quick and simple to prepare. Serve it alone for a low-carb dish or on a bed of steamed rice.
1 head cauliflower, broken into florets
1 lb. chicken breast, cubed and browned
15 oz. jar Rao's Homemade Alfredo sauce
salt and pepper
1 small onion, chopped
1/4 c. Parmesan cheese
1/4 c. fresh parsley
2 garlic cloves, minced
Preheat oven to 350 degrees. Grease a 2 quart casserole dish.
Brown cubed chicken in a skillet with oil until no pink remains.
Stir together cauliflower florets, cubed and browned chicken, Alfredo sauce, salt, pepper, onion, parsley and garlic.
Add cauliflower mixture to prepared casserole dish. Cover with Parmesan cheese.
Bake uncovered for 50 minutes.
Serve, topped with fresh parsley.
