This easy to make main dish is loaded with veggies, mushrooms and cheese. It's then served with warmed marinara sauce on top.
1/2 yellow onion, peeled
1 carrot, peeled and roughly chopped
1 celery stalk, roughly chopped
1 c. button mushrooms
1 red bell pepper, seeded and roughly chopped
1 1/2 lb. ground beef
2 eggs, beaten
1 c. shredded mozzarella cheese
1 c. bread crumbs
salt and pepper, to taste
1 c. heated marinara sauce, for serving
Preheat oven to 375 degrees. Grease an 8x4 inch loaf pan.
Add onion, carrot, celery, mushrooms and bell pepper to a food processor; pulse on high until finely minced.
Add mixture to a large bowl with ground beef, eggs, cheeses, bread crumbs, salt and pepper; mix until combined. Transfer mixture to prepared loaf pan, packing it in.
Bake for 45 minutes or until cooked throughout.
Serve with heated marinara sauce on top.
