Description
This easy to make main dish is loaded with veggies, mushrooms and cheese. It's then served with warmed marinara sauce on top.
Ingredients
- 1/2 yellow onion, peeled
- 1 carrot, peeled and roughly chopped
- 1 celery stalk, roughly chopped
- 1 c. button mushrooms
- 1 red bell pepper, seeded and roughly chopped
- 1 1/2 lb. ground beef
- 2 eggs, beaten
- 1 c. shredded mozzarella cheese
- 1 c. bread crumbs
- salt and pepper, to taste
- 1 c. heated marinara sauce, for serving
Steps
- Preheat oven to 375 degrees. Grease an 8x4 inch loaf pan.
- Add onion, carrot, celery, mushrooms and bell pepper to a food processor; pulse on high until finely minced.
- Add mixture to a large bowl with ground beef, eggs, cheeses, bread crumbs, salt and pepper; mix until combined. Transfer mixture to prepared loaf pan, packing it in.
