Hobo foil dinners are fun to make and delicious to eat. This one is prepared with ground beef, potatoes, carrots, onion and lots of wonderful seasonings. They are great for campfires or on your backyard grill.
1 lb. lean ground beef
1/2 t. garlic powder
1/2 t. onion powder
salt and pepper
1 lb. baby potatoes, cut in half
3 large carrots, sliced into one inch cubes
1/2 onion, sliced
2 T. olive oil
1 T. Italian seasoning
1 c. Colby Jack cheese, shredded
Heat grill or ready a campfire until hot. Cut 4 sheets of heavy duty aluminum foil.
Combine ground beef, garlic and onion powders, salt and pepper; shape into 4 patties; place in the centers of the aluminum foil sheets.
In a medium sized bowl, stir together potatoes, carrots, onion, olive oil and Italian seasoning. Divide mixture evenly between packets; fold the aluminum foil over; seal packets.
Place packets on heated grill or over the coals of a fire. Cook for about 45-60 minutes or until potatoes are tender.
Carefully open packets; evenly top each patty with cheese.
